Whether it’s summer or winter, ice cream has no weather boundaries. If you want to experiment on your dessert-making skills, try making macadamia nut ice cream. It is one of the best, most wonderful ice creams you can ever make. In this recipe, we are going to use natural sweeteners.
- 1 ½ cup milk
- ½ cup Nutramedix stevia (natural sweetener)
- ½ cup roasted macadamia nuts (honey roasted option)
- 2 tablespoons unsalted butter
- ½ teaspoon salt
- 1 ½ cup heavy cream
- 1 teaspoon vanilla extract
- Small saucepan
- 2-quart pitcher
- Ice cream machine
Preparing this ice cream is just as fun as it is delicious to eat!
Place the freezer bowl of your ice cream machine into your freezer for 24 hours. Meanwhile, prepare the ice cream mixture.
Finely chop macadamia nuts as they will become chunks in the ice cream. Melt the butter in the saucepan and add chopped macadamia nuts. Sauté over medium to low heat for a minute. Add milk, vanilla extract, and salt in the saucepan, and then stir well. Add Nutramedix stevia, or you can also opt for NOW Foods natural sweetener (both work wonders) and stir until sugar dissolves. Remove the pan from the heat and let it cool.
In a 2 quart pitcher, combine this mixture with heavy cream. Chill the mixture in a refrigerator overnight. Chilling will help the ice cream to develop finer texture and the flavors to blend in.
In the next day, take the frozen freezer bowl out of the freezer and set up your machine. Pour the macadamia nut ice cream mix in the bowl and turn the machine on. Let it churn for 15 to 20 minutes until the ice cream looks soft. Add the ice cream to a plastic bowl and freeze for next 4 to 5 hours until it gets firm.
Your macadamia nut ice cream is ready to enjoy!
